Two liquids can form highly stable emulsions due to agitation, transfer through a pump and cooling, or other reasons. The specific gravity differences between the liquids, their interfacial tensions, and the droplet dimensions all play key roles in the stability of the emulsion. In general, the smaller the droplets, the more stable the emulsion.
